And the final cut...sliced by hand until I get a new slicer. The hardest part is getting it all in to the freezer bag for the fridge without eating it all.
And here it is fresh from the smoker at 165 degrees. Got it wrapped and foiled in a towel to rest for a bit while I finish making our homemade pizza's in the oven. I'll post some sliced pics later.

They just opened this market a month ago, so maybe they are just running cheap for now. We'll see as time goes by. They also have a small cafeteria inside and sell fresh made Mexican food and pastries all day long. There carnitas were outstanding, I'll grab some more meat prices when I return to...
On of the key benefits of my job is telecommuting in to work from home which in turn allows me more time to practice smoking while I sling code. Today it's strami time! I bought a Grobbels CBB for $1.99/lb from a new Mexican grocery store that opened up near my work. (Pork butts for $1.19/lb!)...
After getting used to the nuances of charcoal in my new Brinkmann charcoal smoker by grilling burgers and a quick rib smoke, I am ready to step up and go for a pork butt this coming weekend. I have not made any modifications to the unit yet, just as it is out of the box.
