I would echo that things will change as your smoker gets "broken in." I bought a 22" WSM about a year ago, and it definitely took some time to get it locked in. I had to learn how to work the vents right, how to set things up, and when to use and not use water in the pan. Now I'm very...
It turned out fantastic. I put it on about 7:30 am today, ran the WSM at about 250-260. I did wrap it at 160, just because I was hoping I could make dinner time. It hit 200 around 5:30 pm, so about 10 hours total for a 10.5 pound picnic, not bad at all. I let it rest for a half hour or so and it...
Oh, that makes more sense now. The bone on the end did look just like the bone from the butt I ordinarily use. I've seen these picnics before but never bought one, I assumed it was the whole shoulder.
This is my first time smoking a whole shoulder. I've smoked countless butts, just never the whole shoulder. With the meat situation, I could either get a boneless pork butt, or a bone in full shoulder. What's the point of boneless Q, right? It's a 10.5 lb shoulder, so I have no idea how long it...
Just to update the thread, here's how I ended up going about things. Both butts got to the right temp right around 11:30 pm the on the 3rd. With the WSM I've been smoking at a higher temp, around 275 or so as my new smoker seems to hold that high temp better thus far. This is leading to shorter...
I probably should have waited and let them work overnight, but the WSM is still too new to me and it isn't holding temps as good as it will. I need to build up more of the good stuff in there to seal the gaps. It's actually really holding temps great today, but I am running it hot at around 275.
I thought I'd combine a few things in one thread here. I recently picked up a WSM 22 after my MES 40 heating element gave out for the second time.
Today is my third cook, and I'm starting to get the hang of temp management and such. It is a different beast from the "pick a temp" of my MES. I...
I really liked my Masterbuilt 40 with Bluetooth I got 3 years ago (I'm not sure if that is the Gen 2.5 Bear) but I have to say the heating element has now died on me twice. I do keep it outside, but it's covered when not in use. I thought you were supposed to keep smokers and grills outside...
Thanks for the feedback so far. It's funny that the one piece I hasn't considered at all is now at the top of my mind in the WSM. It sounds like perhaps it's a very good middle ground both for budget and how much active management it needs. The MES was always good in it's mostly set it and...
And I apparently forgot a very popular option - the WSM. My very first smoker was a red Brinkmann Electric vertical from HD, and I kinda assumed that vertical smokers like that weren't looked upon favorably. It appears I was wrong, as many swear by the Webers.
I got an MES40 3 years ago for Father's day. It was a fine smoker for me, but the heating element gave out for the 2nd time and I think I'm ready to move onto something of a different design. Now, the best way for me to do that is to buy the thing at Home Depot, since I have all kinds of credit...
I'm going to have to try a different lighting method, and I'll also try it with the chip loader removed completely. I'm a little bummed out this didn't work as easily as I hoped, but perhaps I just need to tweak a few things. I also saw somewhere that people microwave their pellets or do other...
Hey all--
I've had the MES 40 Bluetooth model for a couple of years now, and it's a great smoker. I like how roomy it is, and outside of having to replace the heating element due to some wires frying out, it's been a dream. But one thing always bugged me, managing the chips and chip loader...
Thanks guys.
First, yes I was using the posted temp from the MES 40 itself. I've not had any issues with it in the past, but like I said it was fairly cold all day yesterday.
I wonder if there were still some frozen areas that threw the whole thing off. Because about an hour ago I took it out...
