    Looks good.  I was just toying with the idea last night of scarring the tops of the butt but I backed out today.  I have about 130lbs cooking out there right now for an event for tomorrow.  Times are good.

    Maverick probes

    I just bought a new Mav to replace the one I have had for around 8 years.  One of the probes is off by 30*.  It has a 90 day warranty.. still waiting on Mav to get back with me.  Sent them an email two days ago.

    I'm assuming you DO still leave the water pan in even though you don't put water in it?  It does work good as a baffle between your coals and meat.  I always just line mine with a new piece of foil before the cook.  When done, just throw it away.  I've also filled water pan with sand and covered...

    Did you use the water pan with water in it?  That really helps regulate temps a lot and keeps the beef more moist.

    1/8" will rust out faster too.  Keep that in mind.

    WSM 19" vs 22"

    Go with the 22".  I have the old 19" one and the food grates are only 17" wide.  It gets pretty tight on there when you really cram it. Reliability.. I've had mine for around ten years I guess.  Still as good as the day I bought it.  Cooks like a champ and can cook long hours unattended.

    I personally like oak or hickory for butts and brisket. I would put the butt on the bottom rack with a full pan of water under it.
