Hey all! been a while!
I did some pulled pork over the holiday weekend, but I also decided to take on the task of making bacon from scratch. Here's the outcome:
Just be patient - that's the biggest thing. I got frustrated with this particular brisket because I was a bit tired. I should have gotten more rest, but I couldn't sleep for some odd reason.

I pulled it off the smoker at 150, and pulled it out of the oven at 192.
I did use foil in the oven because I didn't want it to dry out in the oven. It was darn good!
