Did up a butt and some ribs as well as ABTS. Thought I would try my own filling, came out pretty good. No finished pics, they didnt last.
1 pack cream cheese
1/4 of an onion finely diced
10 to 14 lil smokies finely diced, yes I diced em.
1/4 cup pepperjack cheese, shredded
Mix all, fill and...
Gonna give this a try tom... My question is would it be ok to dice the lil smokies and add them to the cream cheese or am I better of leaving them whole??
Small butt, rubbed and injected. St louis style ribs are a first for me. Ribs were dry rub and apple juice. Butt is foiled and finishing. Ribs were pretty good. Oh also made a batch of beans.
In laws just ate ribs, the butt is resting. only half rack of ribs left. Ribs fell a part couldnt even cut em. picked the bone up and the meat was still on the plate. Will post sum pics of the pork when I pull it.

Fired up the smoked and threw a butt on, the wife likey the ribs so I picked a couple racks up. Then she tell me the in laws are comin for dinner.....no pressure. Hope it all turns out.
I personally try to offend as many people as possible.

Thanks all, I have already been reading up in the Pork section. I do have a question for all near me. I am looking for a good source of hickory. I am currently paying bout 35 bucks for 40 to 50 lbs. Wasnt sure if I could be doing better. Again thanx for the welcome.
