6 of us are going to hunt camp for the start of bow season. My back has flared up so to make the best of the situation i'll be cooking all weekend. Friday night we'll have a fish fry to cook some of the bream we caught this spring. Sat. we'll put a brisket on about 5 am.Planning on smoking...
there's more than one way to smoke a butt. Early foiling gives less smoke asofter bark but a juicier product. Later or no foiling more smoke & harder bark. I didn't foil in the past but now foil about 6hrs. To be honest I like it both ways
The chargriller is a good warm weather smoker. It's hard to keep temps up in the winter. The ambient temp greatly affects the lid thermometer as it measures the lid temp not the internal air temp,in the summer my lid temp will read 175 while my 2in therm read 100 (without a fire). What I suggest...
At home I use charcoal with wood logs for smoke because I can get 3-4 hours between tending. At hunt camp we build a base with charcoal and use wood for the rest of the cook. We have an inexhaustable supply of free oak & the members are cheap. Burning wood produces a lot of heat and only mild...
Durkee citrus grill seasoning mix (from sams ). I either mix the citrus grill with italian dressing for a marinade or mix with oil for a rub. The chargriller is great to grill fish on, the castiron grates allow you to grill directly on the grates without a fishbasket and you can get a good sear.
My son got his eagle last year. The adults did a lot of cooking in dutch ovens and inexpensive portable cookers. You don"t have to spend a fortune to turn out good product. glad to have you.
Pretty good as a set it & forget it smoker.I cooked a 6 lb butt today, at 7 am I put it on let it cook till 4pm (when I got home from work ) foiled it & cooked for 3 hours at 250. It was tender, moist, moderately smoked,& had a good crust. Only downside the meat didn't look as "pretty" as done on...
I've been outdoor cooking for bout 30 years. Learned on a char-broil model
940 with smoker box. Bout 10 years ago moved the 940 to hunt camp & got a chargriller with sfb. 4 years ago got a Vermont Castings gasser for fathers day. 2 years ago got a MES for xmas. 2 months ago got a New Braunfels...
I'm going to try something new, i'm going to see how my MES works as a RONCO (set it and forget it) smoker. My friend with a BGE has ticked me off.The plan is to put a 6LB butt on about 7am. I'm putting dry chips & chunks
on the bottom of the wood pan and soaked chips & chunks on top of these to...
my chargriller/sfb is about 10 years old.The original sfb charcoal grate finally burned through. I now use a charbroil shaker basket (from lowes @ 13.99) placed on top of the previous sfb cooking grate. The cooking grate I trimed with a hacksaw to sit about 3 in. from the bottom of the sfb...
