Two kind of charcoal water smokers.
A WSM type allows regulation of temp by adjusting airflow, a water heat sink is not needed.
The brinkmanship type has no way to regulate airflow & a water pan is needed to keep temps from soaring.
I think it got cooked on too high a temp.

A boneless leg of lamb is an excellent Easter cook. It's what I'm doing.

meats absorb smoke differently , ground high fat absorb greatest, a hunk of low fat ( pork loin ) absorb slower.
We do become desensitized to smoke, let a non cooker taste if unsure.
For the WSM , for low temp cooks I close 2 of three vents & adjust air flow with the easiest...
The WSM 22 has slightly more cooking area than an 18 with a stacker.
The big thing is the 22 makes cooking ribs, briskets & other long or bulky meats easier.
I've had one for a year or so, mine only uses sawdust ( easy to make from pellets, wet pellets, they fall apart let dry & you have sawdust)
