i must say, i am not enjoying these anymore!

26 beers, humm.  Seems one would be put off by the smell and taste of beer rather than the food that was regurgitated as a result of the beer.  Surprised you remember what you ate.  No judgement, BTDT back in another life. I grew some fine Yukon Gold potatoes a few years back.  Just loved the...

    5# Vertical stuffer $79....

I went to Northern tool a couple weeks ago and bought one of these on sale.  Seems fairly well made and functional for the small batch operator.   But OMGOODNESS!!  What have I been doing trying to stuff sausage casings with my grinder??   A whole new world opened up.  I've made 5 pounds of...

    MES Stick Batch

Maybe a dumb question but,  once vacuum sealed I assume you store them by freezing right?    I want to make some sticks.  Maybe this weekend.

    At home meat/game processing

And as a "PS" to my above post.  I mention temperature.  I believe this is the most important aspect effecting the quality of the meat and finished product.   YOU MUST GET THE HEAT OUT OF A CARCASS AND COOLED DOWN ASAP!!!   However you do it, the meat must be cooled quickly.  In a warm...

    At home meat/game processing

I was never terribly happy with the cuts, portions, packaging, and taste of my deer when it was returned from a processor.  Particularly dissatisfied with the burger and sausage. One day I was in there waiting on them to package me a butt and watched one of the butchers pull skinned, grey...

    My first fattie pictures

Actually I do make my own sausage. But when I first heard of making a fatty, I just had to try it and a quick first shot with Jimmy Dean was just the easiest. When I fry my sausage there is no pool of fat in the pan. In fact there is little fat in the pan and that's what I like about it. I...

    My first fattie pictures

Well I did my first fattie today.  Rolled it yesterday and smoked it today. (That meant something different back in the 70's!) Flattened ole Jimmy Dean in a bag the split the bag & added ingredients before rolling,  mushrooms, onions, provolone, and potatoes. I cut one large baking potato...

    Fatty question, potatoes?

I sort of came to the same conclusion and ended up cutting into 1/4" cubes and sauteing in olive oil. Thanks for the reply!

    Fatty question, potatoes?

A question for the fatty experts. If potatoes are diced small and used as a fatty stuffing, will they get done? I'm wondering if 3+ hours to 165-175 IT will leave the potatoes not cooked to tender stage. Going to try my first fatty tomorrow with potatoes diced small, provolone, onions, and...

Something I learned about my MES 30

Wish I would have seen this before but had no reason to go searching for it until I had the issues.  Good advice.  No biggie though, I'm learning a lot and I'll just put this in the lessons learned basket.  Only lost a chicken and a few wings so it could have been worse.
