you could try somethinfg like a pot roast except smoke the trimmings and then add with potatos and carrots or maybe do a bbq type spaghetti and use the trimming for the meat sauce .or a lasanga
weber makes a pretty good commercial chicken rub and i have also used byrons butt rub with real good results.would not marinade just because i dont think it would make much of a difference to waste the time and marinade
i would brine a turkey overnight but not a chicken but thats just with my brine i only do chicken for 3-4 hours if the salt content is not that high i can see where overnight would be a big plus .
