    Ozzieb, Why not put a thermometer in it and which the temp.  When you reach the temp 140, then cut back on the temperature to finish cooking..

    Welcome. You will find that you cant go wrong with the MES and this FORUM. As stated above check out Jeff's smoking course. You will love the ribs you produce from the 3-2-1 method, and your wife will let you out of the dog house.

    Hi, With all that meat, you will need a professional meat taster, I am ready. The drain hole lines up fine on mine. I like to line the base tray inside with foil, and put a hole in it, so it drains. I have been meaning to foil the out side tray also, then I don't have to wash it.

     Try the Phone book for a restaurant supplier. I tried Walmart, Target, Sears, and some others, none of them had any. I just got some about an hour ago, from Kitchen Capers, in Moorestown NJ.
