Hello T-Square... welcome to the forum, lots of great information and feedback will come your way. I'm glad to hear you purchased and East Texas Smoker, I'm doing the same thing the end of the month. I'm very interested in what you have to say about it and I'm sure I'll need your advice soon...
Dean....what a great looking rig! I'm sure you'll put out some great Q. You certainly put some time in determining what you wanted.
Please post your thoughts on the CyberQ, that's one option I've been looking at.
I know the measurements, but if you load it up let me know how much meat you...
Hey Lou.. If your going to have company I would recommend a trial run to get to know the smoker. Try some chicken, doesn't take as long to cook and is forgiving. Jeff's Rub is really good, but the meat may be darker them you expect due to the sugar content.
Don't know about the wood in an...
I bought mine last spring and have used it at least once a week. Very pleased with it. I did make a charcoal basket which helped keep the heat longer. I would recommend moving the thermometer lower towards the level of the meat. The fire box did warp a little, but it was my fault for letting...
Wes... We are fortunate to have ovens at the church, so I take it a few hours early. You will have at least 6 trays of meat, big roasters might hold more but may take more time to heat. Ask for help for warming and delivery.
Doesn't sound like you have a smoker Onsite, so your...
I cook for our church quite often for groups that size. Trying to pull 20+ butts onsite will be a problem, you'll run out of time. Cooking and shredding it a couple of days ahead works great if you keep it moist. If you are a regular group cooker, check out a Pork Puller on the web. I don't...
Hebby... here's another method.
Cover brisket with yellow mustard, coat with your favorite seasoning (put it on thick). Smoke for 3-4 hours uncovered, flip 1/2 way through the 3-4 hour time period to get the smoke ring. I then put it in a foil pan with some liquid and cover. I use Dr Pepper...
Paul.. several different ways to smoke a pork butt, but the simplest and most common way I know of is cooking it long and slow. When the butt gets upwards of 195 and it's typically wrapped at that point, it's ready. The bone will pull out very easy, then the pork is pulled or shredded. I...
Michael... i don't use mine for grilling, only smoking... I added a grate below the smoking grate to put a pan of water if I want or to put charcoal if I decide to charcoal. That way the charcoals not on the bottom of the barrel. The other thing is a charcoal basket in the firebox. I was...
Welcome fellow Texan... I have the Pecos too, been very pleased with it. Made a few modifications recently that have really helped. You'll find lots of information on this site, just snoop around a while.

Mike... shame you won' be here the week before Thanksgiving. 8 hams, 10 turkeys will be smoked, and in-between that, BBQ for Wounded Soldier here at the lake. Let me know when you plan on being in town.... JB
Hey everyone... I've been checking out the forum for a couple of weeks now, it's been very informative and helpful. I really enjoy checking out the differenct posts and seeing what people have tried that has worked, and of course those things that have not!
