My wife and I are both diabetic.  Splenda has a brown sugar substitute that seems to work pretty good. Good Luck! TucsonBill

Is this the Maverick everyone uses?

Yep, it works over 100 ft.  I am usually around 150'.  The other thing I like about the 732 is that you can get 6' probes for it! TucsonBill

    Brisket Aging Question

Thanks for the responses!  Beginning to appear that this is one of those "smoking religion" type questions! It is going to be interesting to see the research from Texas A&M!  Thanks for contacting them Gary. Bill

    Brisket Aging Question

When you purchase a Packer cut brisket in Cryovac, do you typically age it in the fridge?  If so, for how long?  I have heard everything from no aging to a week or more! Another question:  Do you separate the point and flat before smoking? TucsonBill

Hi all, I am Bill from that small town to the South.  For the uninitiated, that would be Tucson! Just received a Camp Chef 24" Smoke vault to replace my old offset smoker.  For charcoal smoking I use a WSM. TucsonBill
