You shouldn't have any problems getting smoke at temps of 250-260 with everything where it is supposed to be. Only time I have had problems with not getting smoke is with temps around 200 or lower and then I just to the chip pan and put it right on the very bottom of the smoker pretty much...
If it is a plate steel wood burner then I don't see why it wouldn't work. The problem with the cast iron ones is welding. You can weld it but the weld joints are weak and fragile. If its big enough then use it. I have been looking for the same thing to use on my next build.

Sounds like a heck of a plan. I assume the Viking let wood or charcoal cookers for tailgating? I heard places are starting to outlaw that because of the fire danger. For the colors, you can find high temp paints for automotive in various colors.
Just remember, on smoker builds, the thicker the better. Thick means more insulation/heat retention, thin mean heat loss. So a 3/8" wall chamber is real good.
