    Butcher paper vs aluminum foil

The paper is suppose to allow your meat to breathe, and some smoke will get through the paper. Once wrapped in foil, your meat is done for adding smoke flavor. May as well just take it in to the oven to finish it.

    Hi from Central PA!

Welcome from central MD. I have an A-MAZE-N tube smoker for cold smoking, don't even light a fire in the smoker, just the tube, outside temps have to be cool. I've done blocks of cheese and shrimp with it. comes out good. (shrimp goes in gumbo after smoking, makes gumbo most excellent).

where to put the water pan?

on my Char-Griller w/side firebox, I put the water tray under the meats smoking, steam helps tenderize and bowl collects grease. I've recently gone away from the water, and currently using a bowl of lava rocks and at other times a bowl of sand, trying to determine which is a better heat sink...

    Can I Freeze Them?

    Feeder fire

Feeder fires use a lot of wood, so if you have ample wood supply, give it a try, otherwise I wouldn't recommend it. They do help in adding hot coals into the smoker pit when needed.

    Not much smoke flavor

What was the temp u smoked at and for how long? Also, what wood flavor were you using? Some wood flavors like Alder or Oak are very mild and would not impart much wood flavor.
