Well, I have smoked chicken before but never a turkey suddenly my wife and mother-n-law show up with 2 turkeys apiece.
They want me to practice and if it doesnt work out then it is no big loss since they bought them for 36 cents a pound. Looks like I got my work cut out for next weekend.
Could be just coincidence but ever time I do pulled pork the BUTT does better and tastes better than the picnic. Tho it has all been good at worst.

It has been a long time but, we use to smoke them on the half shell, be careful it doesnt take long to dry them out and they absorb smoke quick so no long than an hour. I may have to try that and get back with final results.
Oh yeah make sure you use a catch pan - oyster juices dont smell too...
I would make sure that the temps on the cooking surface were at 230 and remember it doesnt take long to cool down pit while your spritzing so do it quick and adjust smoking time to actual temperature target time. But, if they are good I wouldnt sweat it much unless your looking for perfection...
Welcome aboard, I too just found this site and even tho I thought I knew a bit about smoking I found out quickly there is soooooo much more to learn. Specially when you have a lot of folks willing to share experience.
Good wife you got there. My wife says if I will do the smoking she will clean up, since I work so hard at it. (I keep he spritzer bottle handy to make sure it looks like I am working hard when she isnt looking)
They look great! Glad you jumped in feet first. For me, ribs are the easiest meat I have tried. If you want more flavor make sure you get all of the membrane off the ribs ( you did take off the membrane didnt you) I have found that makes the whole difference between good ribs and ribs so...
Actually, I bought Jeffs rub and saw that it was almost what I already used but it went to support the server for this site so it was not a wasted effort. Just like anything, you tweak and adjust recipes to suite your own taste. The chicken was just lemon pepper and italian herb seasoning...
