    Using Bearcarver's awesome guide, I'm smoking a big ol' shank ham that our local had on super sale:  Six dollars for any ham, with a thirty dollar purchase. Which would have been perfect, but they were out of turkeys!  I didn't know what else we needed, and only had about $20 worth of supplies...

    Just a bit late for the one-year anniversary of this post, I can say definitively, you can smoke three racks of ribs and 4 lbs of chicken wings in one smoke.   Mine were delicious, but make sure they get to the right IT.  (The experts are pretty clear about this).  I took mine off a few degrees...

    Well, everything got eaten. The ribs were delicious but not as tender as I would have liked. Probably needed another hour after all. Wings were fantastic. I use a blend of buffalo, sriracha chili, and Famous Dave's spicy BBQ sauces. Maybe 3 ribs and a few wings left. Cheers, thanks...
