I only clean my water pan and dump my ashes for rust protection. The racks I lightly rub off before each use with a scotch brite, before I cook just to get any old bbq sauce etc off, I treat my racks similar to a cast iron pan, that old stuff on there keeps food from sticking and adds flavor.
The only thing I use my electric for is Turkey, mainly because the consistent temperature. They always come out great. Everything else goes into charcoal or my gas, depending on my laziness factor. and alcohol intake
We go through a bushel of Pueblo's and a bushel of Hatch every year, we don't eat em on everything like some folks but we love em. Son lives in ABQ so we go a few times a year grab some hatch and plenty of Rojo to get us through the season. I'll have to try that lemonade next time I'm there...
