Over the Christmas break I did two tri tips, on marinated in sesame ginger dressing was the hit of the party. After time in the marinade I sprinkled on the garlic etc. as the others are suggesting. Cooked to between 140 and 145, turned out great.
I get a smoke ring in my food when I smoke them in the Bradley. I think that thing generates a lot of smoke and it keeps it coming on a consistent basis. I am not sure why it would not produce a smoke ring.

I went to thrift stores etc. this weekend looking for weber lids for my UDS builds. Ended up finding a cheap bbq for $29. For this I ended up getting two lids, the bottom fits one drum and the top fits the other. I also ended up with one grill and a small grill to use as the bottom of my fuel...
I make a lasagna fatty that is always a pleaser. Regular JD sausage filled with cooked lasagna noodles, meat sauce, ricotta cheese and shaved parmasan cheese. Add the bacon and smoke. When done you cut in 2 inch pieces and place in a pan. Cover with sauce and top with motzorella cheese...
I just got two barrels given to me so now I am gathering the other parts to begin building my UDS. My son gets one too. Wish me luck as this is a closed top drum and will require a bit of cutting to get things going.
I had smoked turkey on the brinkman without a side firebox for several Thanksgiving meals but never was very happy. Bought a Bradley electric smoker and was ready to make the best turkey ever. I had no idea that it would take that unit so long to come up to temperature, in fact it really never...
To say that is helpful is an understatement. Thanks a lot for the information. While I will not be able to use the idea of a removable bottom for cleaning this idea still allows me to create the UDS without a lot of work that I was planning. Who would have thought up was down
I have been given two closed top 55 gal drums and want to make a UDS out of them. The problem is the tops are closed. Has anyone ever used these and made them work by just cutting off the top say 2 inches of the drum and then putting a sleeve on the outside of "lid" portion so that it will fit...
I started with electric and am now using lump charcoal on my Brinkman Smokin Pit. The Pit is the best but the electric still has its place when I want to go the easy way. I also use it for cheese because I can get really low temps in the electric unit, a Bradley.
I arrived home from work early today only to be greeted by a phone call from my son who lives out of state. He wanted to confess that he has gone over the edge and put a Papa Murphy's pizza in the smoker. I told him it was just fine, others have done it too. What a proud moment for me to know...
Thanks, as usual lots of good ideas that come back quickly. I will check out the places mentioned and then post pictures when I finally come up with something.
I have one that I have used for two years and I really like it. Like some electric smokers it is hard to get higher temps in the cold weather but it is a good product. As for the pucks, you can find them on line sometimes for a good price. Overall, I do not find them out of line for what you...
Based on information on the Naked Wiz site I researched my area and found some Wicked Good Lump, Weedend Warrior Blend. This stuff is the best I have used to date. Good by bricketts!
