    about 8 hours ito the butt 2 hours into the fatties, hit the stall on the butt been at 165 for 3 hours

    fatties are on, one pizza fatty with pizza sauce mozzarella and pepperoni.  the second one has cheddar cheese, lil smokies and bbq sauce

    we have some new friends coming over for dinner tonight and what a better way to star a new friendship than with bbq. rubbed the butt last night with my rub. wrapped it and put it in the fridge over night.  started at 5 this morning smoking with peach wood an my trail master.  more pics...

    when i did my cure i coated it completely with vegetable oil then got about half a chimney lit of charcoal, putt in and let it ride for about 30 minutes just to let everything warm up, then i added 3 good size splits and got a really hot fire going and just let it burn itself down to nothing...

    try putting your wood on top pf the firebox to warm it up, i do that and one the wood has slight char marks i know its ready, catches fire immediately and you may or may not have any white smoke
