    I'm not sure what they did but it was definitely flat.  Maybe deboned the breast I'm thinking.  The chicken I had was on a spit so it wasn't like that.  May go back tomorrow and order on of the flat ones just so i can see what they've done to it. Was a fun experience though.  Not a place...

    First time curing/brining beef using a bag. Can anyone advise?

    It's the same process you just put it in a ziploc bag and suck the air out.  I usually mix a half batch of brine when I do it in a bag.

    You might want to do what I did.  Buy a lamb from one of the local FFA kids and have it slaughtered.  Helps the kids AND you get the meat :D

    When I look at your pics I see no pull back on the bones.  That would indicate to me they still needed to cook longer but given how thin they were (From what you say and from the pics) might never have gotten "juicy" but definitely could have been more tender.
