Day 4 with the MES - Pork Shoulders - Qview

Here's the finished shoulder, and some shots of the pulling. This shoulder just melted. Was able to use a fork and just twist and pull.  On a side note, I had a strange experience while smoking these two shoulders. I know that each piece of meat is different, and two pieces of similar size meat...

    using vacum sealer and rub

Good idea. You could probably marinate something a few days with it vacuum sealed.

    Steam Cleaning Grill or Smoker

What about one of these? Always used to see commercials for them. It's like a grill brush, steam cleaner combo.

    Smoking a Brisket Flat!

Looks like fun. I too love that quiet during a snow storm. I love being out in snow. When I lived in San Diego I would go up in the mountains outside of town just to see some snow.

Day 4 with the MES - Pork Shoulders - Qview

Here they are when I pulled them at 165 to put them in pans and cover with foil. Added some apple juice to the pan for a little moisture before I sealed it up. I nibbled a little piece, dang is that good!

Day 4 with the MES - Pork Shoulders - Qview

Well, I wanted bone in pork shoulders, but all Costco had were boneless. Since I'm making pulled pork, I went ahead and got them. Rubbed them with Meowy's pork rub, and into the MES @ 225 with 50/50 mix peach and hickory in the AMNS, and Hickory in the MES chip tray. Going to finish with...

    7lb Brisket - QVIEW

Here is the finished brisket. Last time I did brisket, I didn't wrap it, this time I decided to wrap it. I def won't wrap again. It was very tender and juicy, but reminded me more of pot roast than bbq. Would have made good pulled brisket though.

    7lb Brisket - QVIEW

Here it is after about 5 hours. I pulled it from the rack, and put it in the pan and then covered with foil for the remainder of the smoke. It was at 155 when I pulled it. It had a good amount of bark formation.

3 Racks of Baby Backs - Qview - PICS FIXED

Yeah, I try to tell my wife the same thing. This year, there was plenty of bonus to go around, which I'm extremely grateful for in this economy.

    7lb Brisket - QVIEW

Alright, day three with the new MES. I'm giving this thing a workout! For today, I'm doing a 7lb brisket; just the flat as that was all Costco had. Anyway, I rubbed it down with some Jack Stack steak rub last night and let it marinate in the spices overnight. Then this morning, I coated it in...

First Cold Smoking - Cheese and Pecans - QVIEW

Well, here's the finished cheese. Smoked the Mozzarella for about 2hrs and 40 min (was only going to do 2 hrs but got distracted by my wife coming home with a new area rug and having to help her unload it). The rest of the cheese and the pecans went 4hrs and 30 min. I nibbled a few pieces and...

3 Racks of Baby Backs - Qview - PICS FIXED

Yes, I think you are correct. I just used some store bought stuff this time, but last time when I got the good bark I used this: 1/4 cup turbinado sugar 1/4 cup salt free chili powder 2 teaspoons of ground black pepper 2 teaspoon of cayenne pepper  1 teaspoon of ground white pepper I don't...
