wow, this thread slipped though the cracks... definitly going to try that chili recipe next time.
I just grabbed one from the food network site, it turned out very good, but now i want to try this one.
I might need to build both. I told my butcher what i was doing, and he said he could get me a drum.
Is the learning curve of smoking with charcoal the same with a UDS vs mini-WSM?
I've been using a vertical propane smoker for about a year and a half, definitly getting some good Q out of it, but i've been interested in smoking with charcoal and upgrading at the same time. I found there are quite a few cheap ways to do it.
So first i was looking into a UDS. the builds are...
wow, that looks like another good idea. Depending on how the search goes for the 55 gallon drum, i might build one of those. It seems like it might be a nice way to get into using charcoal from propane. from what i've read, i should be good for about 6 hours, which will make it good for ribs...
After looking around, building a UDS looks very easy, and wont cost anywhere near $500.
So, I'M DOING THIS! Hopefully i can get it ready and tested before fathers day, thats when i want to do my first smoke on it.
I'll defintily take lots of pictured, and post them here.
Thank you so much...

My butcher has some awesome corned beef that he gets that has been soaking in a barrel of brine.
Is it as easy as just taking the meat, putting some rub on it, and then smoking it to a specific temp?
Usually i pick up some cooked corned beef and cabage from him, its awesome. This year i was...

My temps are pretty consistent, but my guess is that the temps may vary quite a bit from front to back due to a draft from the door.
as a for instance, I smoked a 15lb brisket, i cut it in half. at 225 it took 24 hours, a 7lb piece of brisket should be done in about 14 hours, no?
at one point...
I remember reading on here that someone found some high heat insulation that he put around his smoker door. I have a vertical propane smoker, and although my meat comes out great, it takes a lot longer to smoke than i would like.
This is the smoker i have...
