Hey, for those of you with a mini-wsm, what kind of cook times are you getting?
i have a firebox in mine that is 4" high.
I'm just wondering if it will be good for 10 hours or so without having to refill the coals.
would like to do a 3-5lb pork butt in there.

as for wood, you can get some at home depot. I go for the chunks over chips. I believe i've seen Hickory and Mesquite chunks there. Personally i've never seen anyone with apple wood chunks, usually just chips.

Today I smoked some baby backs in the mini-wsm I just put together.
Had a feW issues at the beginning, forgot to put the terracotta saucer in, but at that time I was at stable temp, took the top off, out the saucer in, waited a bit, then the temps were low. Opened the vent and then the temps...
Alright, well here it goes... Finished her up. I took these pics from the bottom up, so you can get an idea.
Overall, it was easy, cheap, and keeps temps stable.

This looks like an awesome idea. Guess i'll put it on next years xmas list, and get some meet ready for next summer.
I've never had any dry aged meat... Dont have that kind of money laying around. So is the taste difference like night and day?

Hmm, didnt think of movement of the grills. shouldn't the probe reach the middle of the grill, to get the correct temperature?

I've been using jeffs rub and sauce for my ribs, they turn out fantastic. But now I'm looking for something different. Anyone have a tried and true recipe for a more sweet rub?
My thoughts are if I had a sweeter rub, I could glaze it with honey?
Any help would be great.

Cut the bottom out, got the grill in, 3 inches from the top of the pot. Next I want to make the fire box, rest a terra cotta plate on to of it. Then figure out where to mount another grate.

I think i'm going to build one of these, and then when i can get my hands on a 55 gallon drum, i'm going to build a UDS.
And all of this research and reading that i'm doing it getting me very psyched to start smoking with charcoal on one of these REAL smokers, as opposed to the propane vertical...
