Help I have been challenged! This is a tough one

Sorry for the delay on an update - went the really, really easy route and did a nice size Tri-Tip.    Spoke with the butcher about cooking variations at altitude, and pretty much the only problem I would run into at 8k feet was that the grill would not get as hot as it would at lower...

Help I have been challenged! This is a tough one

Ok I am with family in Pagosa Springs CO. My brother in law is tired of my bragging about my smoking skills and has challenged me to grill something for the 9 of us. Here's the deal - he only has a small gas grill at his condo - and we are at 7000 feet altitude. He said he would take me to...

    Prime Brisket Story

I can tell you that I bought 3 of those prime briskets, have smoked 2 of them and they are fantastic.   I could not believe the price either, and am planning on going back for a few more tomorrow.

Overnite Brisket - plain and simple (QView)

Decided to do a brisket saturday night, kind of last minute.    Rubbed down a 12 lb packer with my favorite rub, but went on the light side and added coarse ground pepper.   No injecting, nothing else: Put it on my OK Joe offset smoker using lump and hickory.  This was taken several hours...

Thanks for a helpful tip - smoker going today

I have an oklahoma joes offset smoker which has been modified based on a number of suggestions from this site.   It is so nice being able to keep the heat pretty constant and much less babysitting. The firebox cage i ordered really, really helps!

Has The Economy Effected Your BBQ Decisions?

For me, yes.  I am lucky to have access to property that has several hickory trees and tons of oak.   Lump has skyrocketed where i live so like others i have just started my fire earlier using sticks.  I buy meat on sale and stock up - this is a change for me because I used to never freeze meat...

    Green Chile Pork Butt?

I experimented with some chicken thighs recently in my smoker - rubbed them with a green chili rub I got in Ruidoso, NM, and basted them in Hatch Green Chili Sauce.   I am thinking of doing a pork butt using the same idea and was wondering if anyone on here had tried something similar.  Would...
