    My Butt went BAD!!

I have had that happen twice now, both times with a rack of spare ribs. One was from Publix, the other from Kroger. On both the sell by date had not been reached. Both times took back and they made it right, but a pain to have to deal with.

Using Small Wood Chunks vs Larger wood pieces.

You are going to love that new Maverick! I have used mine about 4 smokes now, and it is awesome. Curious to hear how you like the AMNPS.

Using Small Wood Chunks vs Larger wood pieces.

Hi wxmanmac, Regarding controlling your burn and temp: Do a search here on the forums for using the " Minion" method on the charcoal. Also having a charcoal basket helps using this method. That is what I do in my firebox on the side of my horizontal OKJ smoker. I dump about 7-8 lbs of unlit...

    So about these butts...

Well to cut it in half I had to debone it - did not have a hack saw handy. Ok so now I am a little confused, you are saying you can smoke a whole butt in the same amount of time as say a couple of halves?? Wait I guess you were getting two whole ones deboned from Costco? I figure if I had of...

    Lesson's learned!

Not sure what might have went wrong on your end, I started smoking in late June early July, and to date I have done 4 smokes of spare ribs. Each time, they turned out great - even the first smoke that was first time for me. They were a big hit for the family. I can say how I did mine - I too...

    So about these butts...

Thanks for the input Brian - I do my spare ribs at 220 but had read 240 was a good temp for a butt so decided to go with that. I am sure you are right about the flavor and better texture though.  Though when I am faced with either a marathon (whole), versus say 8-10 hours tops, well guess I get...

    So about these butts...

Thanks, I have to say even before pouring JJ's finishing sauce in after the pull, the meat was very juicy - it pulled very easy - and that bark was awesome.

My first butt with Q-View - was - (Can I cut my butt in half)?

No kidding, I can see that happening already. Can't get over how great that was last night, and some is still in the fridge - but we are planning to have it for dinner, so I have to resist! Not a lot left, dang daughter and her husband ate so much last night... just enough for dinner tonight...

    So about these butts...

Hey gang, Yesterday I did my first boston butt for pulled pork, and was extremely pleased with the outcome. What a wonderful dinner last night, the wife went nuts over it. My daughter and her husband came over to try some, and they could not get enough. Now I have a dumb question I am sure. I...

Best Charcoal Grill/Smoker Box Combo under $800 (around the $150-$300 range)

Hi Jaybird, Back in June I purchased my first smoker , it is a horizontal offset - The 20" Oklahoma Joe Longhorn. I got it at Lowes for just over 400 bucks. Granted not between 150-300 bucks, but certainly below 800 bucks. Now while it is an "ok" smoker, it has some weaknesses that will a...

My first butt with Q-View - was - (Can I cut my butt in half)?

Lol, you had me worried there for a moment! Yep you are right, I now find myself very much looking forward to doing another one of these. The spare ribs I had done previously were really really good, man this thing was also really really good. Can't get over that wonderful flavor, and I get to...

My first butt with Q-View - was - (Can I cut my butt in half)?

The pull: Pulled with JJ's Finishing Sauce added: OMG, I am so thrilled with my first butt attempt. It was so juicy, and JJ's finishing sauce was absolute awesome. My daughter and her husband ended up coming over, and they loved it. No one used any BBQ sauce! The bark with Jeff's Rub, was...

My first butt with Q-View - was - (Can I cut my butt in half)?

The other half just reached 203 - about 8 hours 15 minutes total. They are both wrapped and resting.  In about an hour to hour and a half, I will be pulling them and putting some finishing sauce in - then the dinner bell woohoo!!
