This weave is genius. I would have never thought to do it like you do an apple pie lattice. Regardless the Fatty I have in the smoker right this minute is weaved up just like this.

Fatty and ABTs are on the smoker. My brother in Law and I carried the smoker through the house and out to the front yard, Grandma is in the Back. ;)

So I went shopping yesterday and got all the fixins for a good sunday smoke.
7Lbs Butt, 20 ABTs, and a 2 Lbs Fatty. Were having a Birthday party at the house today and I figured that would be a great addition to the normal dogs and burgers.
So their I am all excited yesterday evening...

But I made some ABTs today. AVG pepper size was 2 1/2" - 3"
I made a filling out of 2 packs of Philadelphia cream cheese, one small container of Sour cream, and some French's Fried Onion's. Then wrapped them in Hiskory smoked Slab bacon.

I think your temp problem may be with the Baffle design. Try a new design that will take the baffle from the front of the Chamber to the back. Sealing against the sides. Forcing the heat to go down and across. Then use some tuning plates to adjust the heat throughout.

Baffle and tuning plates will bring the other side up to 230ish. Did you do any other mods or seal the unit up?
Also, Kingsford doesn't burn as hot as Lump i would make a suggestion to go to Lump Charcoal.

I put some in a Foodsaver bag with some finishing sauce, Gave it a little stir, Vac & Sealed it. Then put it in the Freeze Box. When I wanted it I just took it out and threw it in a pot of Boiling water. Came out just fine.

I was under the impression that you use a pan Because they flare up? And burning wood is bad.
I could try the wood on coals though for the next one.

i have read on here that alot of you guys use a bread pan with foil for your wood chunks. Well i tried that for my first smoke, and maybe I used a really cheap pan but in the end it was warped and had holes all in the bottom of it where it had been sitting on the coals.

I also have the Kingsford Box.
I used a Cake Pan on my first smoke wrapped it in foil and poked a hole in it. Then I threw that on top of my Royal oak lump.
However. It warped really bad and in one spot even looks to have crumbled. So i am going to be looking for a Cast Iron Corn Cake Pan...
