I have used this smoker for over 2 years with wood chunks in a cast iron pan and now want to buy a tube pellet smoker from A Mazen products.
My question is where to place the tube pellet smoker.
Do I put it to either side of the burner at the bottom of the smoker and if so does the tube...
I have a party this afternoon and need some advice on how I can keep spares and baby backs warm until everyone is ready to eat without drying them out.
I hope to have the ribs ready by 4pm and most guests will start arriving at 5pm. Probably ready to eat by 5:30.
I want to be done and ready...

I am currently smoking some ribs and I am using the Maverick ET 732. I have the barbecue probe on the top rack at rear of rack near the exhaust vent and the food probe inside a potato on the second rack from the top.
I also have a oven thermometer hanging on the third rack.

By the way might have to have a few "surprises" ready for the nosey neighbor that always wants to know what's in the smoker. All in good fun of course and I will have a beer close by...

Also if cooked whole is it best to have a rack to put them on?

I am new to smoking, can you tell me the advantages/disadvantages of pellets vs wood. I currently use a cast iron pan on top of the original wood chip tray. Also do you use sand or water in your water pan.
