I would like to get away from sausage kits. The seven pepper stick kits sound interesting. Does anyone have nice spicy snack stick recipe they would like to share? I did a search, maybe I didn't go back far enough, but I didn't find anything that inspired me.

WOW, everything looks great!. I don't know how to give points. But I will say that Foam is becoming a suasage gury(pobally not spelled right, spelling was never my strong point), and it looks like he is working on becoming a master gardener too!

Great read and great looking hams! You have inspired my plans for a Christmas am. We normally do turkey for Thanksgiving ad Ham for Christmas. I prefer ham better, but the wife prefers turkey, so time I get ham. Yours looks great.

Can you guys give some the names of the scales you are using. I did a search on the site, the one that (I think Pop's) uses, that web site for righton doesn't work. I search Amazon also. I found a few that looked good. Most of the reviews were good, but I noticed that those were provided...
This is a great recipe. I have made it three times already. I do modify by adding red pepper flakes and garlic powder. Everytime I make it my daughter comes over and steals some. She says it's really good. Thanks for the recipe Pop's.

Those sticks look great. I envy any one who get fresh morels. Those things are great. I can't find them in Texas. Had a bunch of them growing up in Kentucky.
Have a question for you guys that use the pre packaged kits. It seems like most are geared for 25 pound batches. It's just me and my wife here, my daughter does still some of them. But I would prefer to make five pound batches at a time. Can most or any of the kits be broken down to that...

This is very informative for me. I have vacumned sealed mine right after it came out of the smoker. Hopefully it will not mold. How long should it air dry?

One of my favorite side dishes if green bean casorole. My favorite desert used to be pumkin pie. Spent a lot of time on my grand parents farm growing up, she always made one just for me.
SmokinVegasBaby, I've had mine for about a 8 months now. It's worked great. I wish I would have ordered the one with the stainless steel tubes, but I can get those later, haven't needed them yet. I did get the small stainless tube for making snack sticks with.

Very good topic. I need to try some of these methods, or have my wife read this section. You don't need land to grow basil. All you need is about a gallon size flower pot with some good potting soil, just keep it watered. We grew ours in two four gallon pots this year along with some chives.
