    Ditto what they said... If you can smell it, you're smoking! I ditched that wimpy little chip box and went with an 8x8x2 cake pan, which seems to get the TBS going quicker and keeps it going much longer. It maybe takes me 15 mins from the time I touch off the burner until the smoke is rolling...

    GOSM Heat Spread

    Haven't noticed any big change in temps, but like Pineywoods said, I rotate racks occasionally during a smoke. I keep meaning to check the temps across the racks just sort of for my own info, but never really have gotten around to it.

    I had thought about pre-cooking the bacon a little bit, but I like it soft so I didn't. Might have to try it on on a few the next time I do them just to see what I think! Can't hurt to experiment a little bit when it comes to the smoker :)

    Well I finally came to my senses and put a batch of ABT's together this weekend and dang they were awesome! I think it was travcoman that I saw this idea from... Took the jalepenos and halved them, cut out the seeds, filled with cream cheese, slapped a weenie tot on top and wrapped with bacon...

    I LOVE freecycle. Never thought about looking for a smoker on there, though... Maybe not a bad idea to scour the boards and see what I can find.     I've only done a few butts, but I don't ever trim off the cap and have what I would consider great results. I may trim it up a tiny bit if there's loose stuff, but it's more for presentation than anything, I guess. Don't think it actually has any impact on the finished product!

    Aah yeah! I absolutely LOVE southern pit. Dad's office used to be between the airport and the track, so they ate there every Friday for lunch. That place is a madhouse just about any time, but you can just about forget it on race weekend! Their cracklin' cornbread can't be beat, either.
