I have a very easy brine for all the chickens and turkeys I do:
1 Gallon water
3/4 cup salt
1 cup brown sugar
1/4 W.shire sauce
Brine over night for whole birds. Two to Fours hours for peices. After brining rinse well and add dry rub of choice.
