I'm smoking another pork shoulder today.
This time I took the shoulder out of the fridge to let it sit while I soaked my wood chips and lit the fire. I let the coals die down and the smoker get to 225 before putting the shoulder on.
I started with all three vents on the bottom fully open and...

How often do you clean your smoker? I usually dump the ashes and just clean the water pan and grates really well between smoking. Ever do a complete tear-down and clean?

I'm struggling to get, and keep, my ProQ Excel 20 Smoker to, and above, 200 degrees.
I put Kingsford Charcoal Briquets in the bottom coal pan, add some lighter fluid and light it up. I wait until the fire dies off and then start putting the grill together. I have the water pan right above the...
I have been reading about the thermometer that works with the iPhone/iPad.
I may go that route as it looks pretty cool.
About the same price as a Maverick ET-732.
How about the reports of the probes shorting out and very poor manufacturing? Some say they were not able to get replacement probes for a long time because so many are needing to be replace by the manufacturer.
Some reviews say that the Maverick is only good for a few feet and if you go indoors it stops working. It also does not tell you the pager has lost contact with the main unit or if the probe goes belly up.
I want to be sure I get something good.

Since I'm not able to get the 1474 working, I may just buy another thermometer.
I like the remote unit that came with the...
You may experience blow over using only a 5 gallon pail for a primary. If you are going to brew often, I would suggest getting a 6.5 gallon carboy so you have more headroom during primary. If you can afford it, stay away from plastic carboys, not worth the risk of scratches.

Hello,
I'm just getting into smoking. I purchased a ProQ Excel 20 brand new for $90 about three years ago from my sister-in-law who aquired a bunch of storage units filled with them when the local distributor went broke. Due to relocating to Texas for work, and living in apartments, I have not...
