I used onestep as well when making some brew, but I switched to the ease of starsan. It's an acid based sanitizer and does not need to be rinsed either. The only reason I like starsan better is because the contact time is only 1-2 min and a little capful treats 5 gal instead of 1...
my vent hole is in the back of the smoker. I rarely get it to escape out that since I have yet to drill a hole into the smoker for one of those water tight thing-a-me-jiggers for my probes. That is probably why it's going out the door more.

Don't mean to hijack, but WC - have you done any mods to yours? If so, what. I'm thinking of doing the PID thing and also some watertight fittings...

I'm new here myself, but I guess that your temp gage is wrong...way wrong...as a matter of fact, mine was rougly 60 degrees off.
1) Get yourself a digital thermometer 15 bucks at wally world.
a) Do a boil test on it (should read 212 deg when stuck in boiling water)

I have their electric and have had one excellent customer service contact. I'm still new at the whole thing, but I really like mine and think it's a descent one for the $$$. Until I can afford a smokeshack anyhow...
