    Back to Basics

Great to hear that. I've always used crisco to lube the o ring, thought that was normal, I have the LEM silicone spray but only use it on the grinder. Letting the meat warm after all the work is done is new to me but I will be using this method. Never thought of lubing the stuffing horn.

    General D Grinder Leaking oil

Too much oil is never a good thing with any piece of equipment that uses oil. Hopefully this fixes your issue.

Mine came with 4 tubes 1/2, 5/8, 1 and 1.25. My thoughts are if it won't stuff a 1/2 tube why did it come with one. Guess I'll find out one of these days.

Sticks for hanging sausages in smoker?

I just cut dowels to the width of the smoker and rest them on top of the rack slides. And yes it does need a good cleaning.

Guess I should have no problem, I run the stuffer at about that speed with SS.

    Back to Basics

I have made them many times starting the smoker at 120 and bumping 10 every hour up to 160 and letting it ride to the upper 140s for IT. It usually takes from 12-18 hours going this route. I know it's a dirty word, I was just looking for the 'shortcut' I read so much about.

    Back to Basics

I haven't tried snack sticks yet. Summer Sausage and crackers are my snack of choice. I did get a package of sheep casings 20-22 last week to try them out when I get my new smoker going.

    SS fail

No added binder by me. I don't know if there is any it the PS Seasoning mixes. This is the first time I've used something other than 80/20 from GFS. I thought I got a good mix but not as tacky as the 80/20 usually turns out.

    TSM Red Roof

With 50"+ of snow this weekend and driving is banned, hard telling when I can get hold of them. Just hope they are all ok.

Nice, I like the idea of having a lid.

    SS fail

A BIG Thank you to everyone for the feedback. I think the biggest mistake was the cheap meat. Plenty of other errors but I think the meat was the big one. Time to try again. It would be a lot more fun if someone else did the clean up.

Not priced much different that ground Not solid but very stiff Sorry, didn't temp it but still very cold and tacky In the fridge for a day or two. I'm still trying to decide whether to let the smoker ride the 12-18 hours it usually takes to get in the upper 140s IT or the the SV again.

    TSM Red Roof

Was going to put it all together today. The bottom edge is damaged, I'll call TSM tomorrow and see what needs to be done. It's not real bad but for the price...

    SS fail

I think I got a log of poorly ground beef. I stay away from Sam's logs because they state fine grind. I buy my SS meat from GFS and usually don't have any issues. Guess I need to stick to the 80/20. I should just grind my own but the prices are crazy.
