I picked up a picnic shoulder and thought I would give it a try today. I have a new electric smoker and have never smoked a pork shoulder so this should be a great learning curve. I cut off the fat cap, dosed it with yellow mustard and rubbed it with Dave's rib rub.

About 10 pounds, did not inject it marinaded it over night in the fridge in Coke. I expect more of a smoked ham not a cured ham.
I will put the thermometer in it later when I add the second round of charcoal.

I have had a ECB for a couple of years and wish I had found you guys long ago. I just modded it with 4 one inch holes in the fire pan (before SM) and a better thermometer. Smoked some chicken and hot...
I have a ECB, would you still use a drip pan or does the water pan serve as the drip pan.
BTW Just found this site last week and am in love with it. I had the smoker for a couple of years and did a lot of stuff wrong.
