The 225 is great and right where I wanna be....my only concern is that I cannot make it hotter if necessary at the moment. I would feel better about being able to vent a little to maintain 225 than have to keep all of it when its 80 deg. outside.

I did one recently. Removed the netting right off the bat, even before the rub. didn't have any trouble, and actually made for more surface area to rub once I "opened up" the roast a bit. It all held together nicely on the smoker and fell apart nicely on the pan when pulling time came.
I have been rubbing the night before...so far. I wouldn't say anything dried out, but if you are concerned about the salt drying the meat out, make a rub with minimal or no salt. Its always fun making rubs from scratch!

Got some ribs and a small brisket ready to go for today. Even made some new sauce for the ribs. Gonna throw on a dozen ears of corn for the kids (gotta eat your veggies!)

Walmart does have a few decent digital probes. Thats what i am using currently. Just watch the displays in direct sunlight and they should work for a while
I would spend the few buck for a probe from wal-mart or something. meat thermometers work good for their purpose, but are slower to react to changes. I bought one of wal-mart's el cheapo digital temp probes and so far its worked great.
After seeing all these fatties....I've had enough! I am trying one out today. Simple with just cheese for innards but I'm sure it will be great! Qview is being ttaken and hopefully soon I can post them. Thanks to all for all the info on preparation!
