    Looking for my first Japanese gyuto 240mm knife.

    Any suppliers or brands you recommend. My current knifes will not stay sharp. Took to work and rockwell tested at 49. Looks like good quality knifes should range between 58 and 65RC. Also what kind of steel do you like. Doing research before spending this kind of money is overwhelming.

    How big of packages do you have meat froze in. I did 20lb packages and takes to long to defrost making me nerviest about spoilage. Next year 10lb max. Here in Missouri it can be any ware from 0 to 80 degrees Fahrenheit this time of year.

    Humidity makes a big difference how much smoke you see when it comes to pellet smokers. Some runs with all variables the same other than RH on my unit will have only light visible smoke.
