Spraying or mopping your brisket is a personal choice, I feel. Your brisk is what you make of it. Experiment & have some fun with it. You'd be surprised at what you could come up with as far as mops or sprays are concerned.
I think I smoked my first ABT's until the bacon was done. If I am not mistaken, that took about 2 - 2.5 hours. And if it were me, I would cook the chorizo first. Especially if it is the pork flavor. But again, that is what I would do. Good luck.

I use apple cider vinegar & let them sit for about 30 minutes or so, for both sides. I understand the acid helps to break down the meat to make smoking easier but I am not sure about that. I only do it because I did it that way when I USED to grill them. It's an old habit. I wouldn't use...
In addition to what Mike (Jax) said, I thought there was an issue with the 140° danger zone, where as, not letting meat stay in that degree range while smoking & afterwards. Someone correct me if I am mis-informed, please.

Thx for the update. I just bought a 2010 Dodge Charger, 3.5L V6, today. I don't thnk wifey will let me get any more new toys for awhile. But I do want that one. I must find a way to convince her. Where can you get the spit & motor? With the ring?
