    I purchased a good Tel-Tru analog thermometer for my MES. Since it is a 2" stem, would positioning it on the left side say...around middle rack area be a good location?

    First attempt at chicken thighs

    That's funny cuz I made the exact same thing yesterday in my MES! They turned out amazing! I stuffed mine with finely chopped fresh jalepeno peppers and pepperjack cheese. 250 degrees till a finished IT of 165. Used apple pellets in AMNS 8x5.

    This recipe is awesome!! I brought a double batch to my "out-laws" B-party Saturday night for everyone to try. Needless to say, I was bitched at by my "favorite sister-in-law" for bringing them.
