ok, heres the deal. i bought me a 8.5# butt today. just rubbed it down with jeffs rub (first time using it, and just mixed it together). plan on cooking it tomorrow (weather permitting, sunday if not tomorrow) at 225-240 for 12-13 hours and splashing it with apple juice/rum mix.

for those of you that have used it multiple times, any adjustments that should be made (i noticed someone felt that the vinegar should be cut back.) also, how long is it good for? if i make it tonight, refrigerate, can i use it sunday night? thanks in advance.
i like to wrap my ribs hlaf way through in tin foil and bathe them in apple juice. u really cant do this with the stand. i guess putting a pan filled with juice under it would take the place tho. just a thought.
the bark has never been an issue with me. i just limit the amount of hickory i put in. i use big chunks, i let one burn out before i put another in.
embrace the hickory. great smell, great taste. just use in moderation. my caution is to watch for temp spikes with burning big chunks of wood.

thanks! i plan on getting to work on that. i want to try a long cook using the minion method so i can get some sleep at the same time. i think this box is the best way to organize it. definitely worth a try for 12 bucks anyways.
i have a chargriller pro with sfb. im not sure how difficult that is compared to others, thats just the type of grill that i have grown up with. i bought mine already assembled and for about 140. hope this helps.
