Meet Molly my Big Steel Keg

That's a very nice smoker, I think that's the same one I saw at Menards. For $299 I'd snag that rascal up.

Getting New Smoker - What to get????

I'd say save up more money and buy a horizontal that will last, 1/4 steel, or skip the horizontal and get a WSM. For the money you want to spend the WSM is, by far,  a better cooker than the cheap horizontals.

New Guy trying for smoked Spare Ribs

What is the reason for such low temps? Have you checked your gauges for accuracy?

My first unattended smoke on the UDS.

Nice, I wanted some ribs but it's chicken today (smoked of course) with Dutchs baked beans.

    Painting the grill/smoker

I used to paint mine (fire box) but it seems the paint would never last long. This year I started rubbing the fire box down with lard after most smokes, it's worked great. Ya can't hardly tell what's painted and what is seasoned. Of course wire brush the rust off first.

    Chicagoland Supplies

It is Lisbon but if you try and look up the place it is listed under Newark, doesn't make sense. We ordered a 1/2 hog and a rack of steaks from them. The hog is ready but the steaks have to age a week. We're picking it up in two weeks.

When do you put your meat on?

Close down the inlets and let the smoker settle down a bit before putting the product on. I always start my smoker long before the need to put meat on.
