    Chuck steak

Cool. I was contemplating on trying the chuck for smoking, but wasn't sure if the results. Guess anything is better with a bit o' smoke in it. Anything used as a rub, marinade, or injection ?

    Cleaning up

A pressure washer should be able to take care most of the dishes. Just need to secure the plates down, or else they go flying off into a wall or something. Going to be investing in one soon.

    pork skin chips

In an episode of Dirty Jobs on Discovery channel, Mike Rowe made pork rinds. If memory serves, the rinds/chips are first rendered of most of the excess fat at a moderate temperature, removed, cooled, then fried at a high temperature. The first rendering is started with boiling water, to...

The terracota smoker he assembled is basically a homebrew version of a Big Green Egg.... it looks something like a Big Brown Egg.

    Food Safety

Food safety concerns are greatly exaggerated. It's a wonder that our ancestors made it out of the stone age without cryogenic refridgerators. My mother left cooked food out on the table overnight without problems. The food was covered up to keep the flies out, but that was it. This included...

    Adding Probes to the GOSM

I use three or four digital thermometers at a time with all cables going through the top vent. I position the probe on my smoker temparature thermometer at the level where the water pan is placed. I found that the door thermometer is very close to the digital thermometer, though the digital...

    Street Barbecue in China

If you watch the food channel, the Surreal Gourmet presented a simpler version of the above mixture for grilling beef. His father's technique was to mix the salt and cayenne pepper in a bottle of water and squirt the mixture on the steaks periodically as it cooked on both sides.

look at the size of this one

Maybe it's my life experiences, but the pictures don't seem right to me. The posing of the pictures with people uses a commonly used trick to fool people into thinking things are different sizes than they are in reality. I think it's called depth of field manipulation. I remember vaguely the...

    A word from your Moderators

Like some members have stated, it doesn't matter what word you use. Some sites have words and phrases that wil eventually lead you to the long P word. Even just using pics or images will bring mostly P stuff. But to protect the site and forum, we have to stop using it. Damnit.

I think there should be a separate forum for photo stuff, something like the gardening section. Granted there may not be much traffic.

Canadian Tire Selection - Help me choose!

The Char-griller is much heavier built than the CT one. I got my GOSM last year at Walmart. Just a 36" narrow one.

Canadian Tire Selection - Help me choose!

If money is not an issue, I'd look at this http://www.homedepot.ca/webapp/wcs/s...k=P_PartNumber Unfortunately, you have to deal online to get it, but it's 1000 sq. inches, compared with the CTC one that's only 235 sq. inches. I currently have a GOSM, but I'm beginning to think a horizontal...

Need a Coffee Spice rub recipe

Well, rubs can be pretty simple. I have watched an episode of Restaurant Makeover that had some Moroccan style ribs. The rub used was just salt, sugar, and ground espresso beans. This show usually doesn't show exact recipes. You need to watch and listen as they cook. Another cooking show...
