    something new to debate

In British Columbia, it is (was?) illegal to serve sunny-side up eggs. This was a shock to me when I was there a few years ago. It would be nice if we could all have butchers we could trust...... TV.... possible information overload....... Internet Forums .....possible b*s* overload...

    Micro Smoker

You can find new ones at Walmart, well at least here. About 80$ Can. THis should work in theory. but still you have to use it outside. http://www.walmart.com/catalog/produ...uct_id=5902599

    something new to debate

Ooops, I starting ranting, sorry. Well, USDA rules/guidelines/whatever are meaningless. As already stated, we will wash our chicken because it makes sense. We will wash our work tools and area after because it makes sense. If you shouldn't wash chicken because of the possibility of spreading...

    something new to debate

It's actually something old to debate......washing. Remember when Ready To Serve meant you could eat whatever out of whatever container directly. Good grief, people get sick from strawberries, bean sprouts, lettuce, spinach.... There was even a problem with apple juice, a supposedly...

    "BBQ University"

Yes, I've seen it before. OLN had a short BBQ competition with some pros and amateurs competing head to head to head (3 teams each episode). They used injections, which most of the judges noticed and disliked. One of the pros used lots of butter after the meat was done. They foiled the meat...

I'm thinking it's time to leave.....

This may be a strange request. Could you take a few photos of the Walmart with the hitching posts and post them ? Not for a laugh. More like a social comment. Now if a Walmart would open in Florence Italy with gondola parking .......

    GOSM low heat question

Are the threads of propane hoses similar to air compressor hoses. I believe I've seen some adjustable valve for low pressure for air brush application. I thought this might be applicable for our smokers.

I'm thinking it's time to leave.....

If this is over the use of a canned product.... who here has the time to make their own ketchep/catsup. Before the commercial products, people had to stew up their own version. As for expressing opinions, this is a FORUM. You should feel free to say whatever you want (within tasteful...

Injecting Pork Butts with Garlic Juice

Sounds interesting, but unless you're a garlic head, you'll want to test the strength of the juice before sacrificing a large (expensive) piece of meat.

Light Brown vs Dark Brown Sugar

On careful exploration of a couple of supermarkets, I did find turbinado type sugars. Curiously, both had them at the very top shelf. They were only available in 1 pound packages, well there was an empty spot for a two pound package. I had a little laugh when I looked at one package. It...

    Knife sharpening

I've seen the results of a professional sharpener and was not impressed. Of course, the fellow is doing it as a business. The "edge" was decent, even on both sides, but very rough. Now the knife was great for a starting saw-like cut, but the edge wore down fast. I've been unsuccessful in...

Another alternative is ceramic stones. They come is various sizes and grits. They're even used to flatten old oil stones. They do also last a long time. (pic removed) http://www.fandfwoodcarving.com/sharpstone.htm I have a set of the bench stones. They work well, but take awhile to give a...

    Ceramic tiles as tuning plates

Should be fine so long as there is no material on or in the tiles, like paints or sealers. Another problem might be cracking from any temperature shock. Tuning plates are for heat distribution so it's more even over the length of the smoker unit.

    HELP!!! Turkey Breast/Roast.......

Rubs are a personal choice depending on the flavours you like. As for finishing temperature, 160° or so is fine if you wrap the roast immediately. The roast will rise to 170° which is the "new" recommended temperature. The old temperature was 180°. LOL, the "new" temperature is actually old...

    Knife sharpening

You might want to invest in a good diamond coated steel and fine steel. Use the fine steel to keep the edge up, the diamond steel when the fine steel can't. This prolongs the life on the knife. The Chef's Choice sharpeners are mini-grinders and eat the blade. The diamond steel will wear the...

    Another Shoulder question

The mesh is for mostly for aesthetics, but it also gives the boneless picnic a sliceable shape. If you're aiming for pulled pork, remove the mesh. This will increase the surface area for maximum smoke penetration and bark formation. You'll also see that a boneless picnic is not an nice...

    Knife sharpening

For rough sharpening or shaping, I use a 1X42" belt sander 400 grit or 600 grit. This gives me an edge similar to the Moran edge. I polish the edge using an old belt with either stainless steel polishing compound or brass buffing compound. For the final edge, I use a polished sharpening...

Light Brown vs Dark Brown Sugar

To any (including myself), Turbinado sugar is a type of sugar cane extract. It is made by steaming unrefined raw sugar. Turbinado sugar is similar in appearance to brown sugar but paler, and in general the two can be exchanged freely in recipes. A popular brand name is Sugar in the Raw. from...
