    Hatch Chili

Grew up in Colorado and now my folks are buried in Santa Fe. I learned to make Green Chile from my Dad. He started out with a couple of pig ears simmering for a few hours to get the collagen for the thickener. Than add the roasted and peeled/seeded green chiles, green peppers like jalapeno...

    Bacon Grease

I often use a rub on my bacon so it taints the grease and so do not usually save it. I do save it when clean. This would be a good back up and a little behind the ear sure couldn't hurt!

Holy Sh*t Mike, I am so sorry for you and your Family. Dealing with elderly parents is hard enough but to get that storm just sucks. I am in Kitsap County so we got some pretty bad winds as well. I am so glad you did not get hurt in your valiant efforts to cover the roof. Please be safe and...

Smoking some spare ribs this afternoon

Good job on the ribs Doug. Looks delicious! When spare ribs are trimmed down like that they are called "St. Louis" style. Uncut they are just spares and that is where the rib tips come from.

    The “Point” of Beef……Pure Goodness!

I have been leery of the Winco meat. When they first opened near me they had the meat labeled as select or better! Now it has moved up to Choice or better! Your post has me convinced to give it a shot. Saw a point this morning so this weekend I will get the point! Thanks for sharing and your...
