That is a fast cook time though. What was your cook temp? Must of been up around 148.888889 degrees (C) in the cook chamber.

Most of Winco was meat is selectin my area. (Wa State) For a while the labels stated "select or better"! Well if it was better than they would charge accordingly.
But for fajitas why not.

Hey @indaswamp, speaking of Dextrose, will it store indefinitely or does it have a shelf life?
Just stored in original container in dark closet but it is over 4 years old.
I have the 700 and not have needed extra smoke beyond an added tube here and there.
I do like the way you seasoned that steak though!

I used to use a water pan in my brinkman but in 20 years of using pellets never have.
Couldn't hurt if you wanted to try. Same with the wood chunks on the diffuser.
I would like to get my diffuser replaced with the newer version, looks like a much better
unit.

I like a pickled egg here and there but never had a good pickled sausage.
I have hardboiled, cold smoked and then pickled eggs which are fantastic.
Was thinking of trying to do some sausage but the taste of the store bought Hot Mamma's
pulled me back to reality!
