    I don't have a trutemp but I have a maverick ET73 and know that alot of the probes for different brands are interchangeable - I know I can use the CDN probes for sure - I just ordered some Polder probes to see if those will work as well. If all else fails try another brand probe.

    Tough casings

    Good post by Pops. I've had some tough casings but mostly from "Home pack" casings. I also soak my casings in water the night before I stuff if I'm using naturals - which gives it about 10-12 hours soaking. Pops - I'm going to add your Syracuse Casing web link to the sticky of pertinent web links.
