    Confused

    By mistake I forgot to rinse the Itialian dressing from my chicken once and whhoooweeeeee it burnt in like 15 minutes.  I'm thinking that I will try a piece of chicken with a tiny bit of dressing mopped on for the last 10 minutes or so. I haven't tried it yet but I will post the results when I do.

    How long to cook tasters

    Since all the cuts off the slabs are different sizes and shapes, I just throw them all on the grate and let um do there thing for an hour or two. If I happen to be running hot then its closer to 2 hours if I am right on track then its about three.  I don't even worry if some of the thinner ones...

    Nice score on the pipe.  The general rules are to build it close to 1/3 rds. Like the firebox ending up 1/3 the size of the cook chamber.  The calc numbers are a low end base to go from. So if it says you need 78 sq in and you were to end up with 90, its not going to hurt ya. You can always...

    My vote is that even if you get hooked up with a mes or a propane rig, that you still put together a drum smoker. They are cheap to build for the most part and the flavor is unmatched in my book. The down side is there is more tending then with the other two mentioned. I have a large trailer...
