Doing my first brisket - not hopeful

OK, brisket got up to 196 at 6pm.  Tested with tip of my Lavapen and it went in quite easily, so I pulled it from the smoker.  Toweled it and put it into the cooler for an hour.  Temp dropped into the low 180s by then.  Had a decent amount of foiling juices (you can see them in the bowl)...

Doing my first brisket - not hopeful

Still trying to keep it in the same temp range (220-225'ish), but without adjusting the temp on the MES, seems to be running hotter (according to my Maverick) after I foiled.  Seems to cycle up to as high as 239 and down to the mid 220's.  But I'm wondering if the probe is touching the foil and...

Doing my first brisket - not hopeful

Hunted all over yesterday to even get my hands on a brisket.  First place (Smart 'n Final) had one but it didn't feel right.  5 more grocery stores and found another, but they wanted $70 for a 7lb brisket, so I passed!  Finally got a reasonable 8lb flat at the 7th place. Seasoned with something...

    Orange County Smokin'

Relatively new user here (though I've posted a few times already).  Received my first smoker this year, a Gen1 MES 30" for my birthday in February.  Did my first pork butt a couple of days later.  People seemed to like it, but I thought it could have been a bit juicier (didn't get any liquid out...

    Maverick ET-733 thread

I finally go a response back from Maverick I guess I agree on the boiling side, but it seems like a junk answer on the low side.  Their site clearly shows it should read down to 32.  Methinks a return and replacement thru Amazon is in order unfortunately.

    Maverick ET-733 thread

I'm less than 200 ft above sea level (Orange County, CA) so I shouldn't have any significant deviation on boiling point (and it wouldn't go up unless I was below sea level).  I'll email Maverick and see what I get from them Yep, a very bright green, but honestly it's a thermometer, not a...

    Maverick ET-733 thread

Thru the glory that is Amazon Prime, my 733 arrived this morning (less than 24 hours from ordering).  Immediately tried it out in boiling water and ice water.  Confirmed temps on my Lavapen.  The reading are unfortunately not spot on as I had expected based on reviews and this thread.  In...

    Maverick ET-733 thread

Not sure on the etiquette of posting deals on this forum, but I was looking around for a good thermo for my new MES.  The ET-732 seemed to be the consensus, but the 733 seemed to be well regarded as an upgrade.  As I was searching for a good deal on the 732, I stumbled across this: The 733...

First time smoking Boston Butt, Timing for Kickoff (West Coast)

After I posted, I found other posts that got me worried about my timing, so I ended up getting the smoker on and up to temp shortly afterwards and the butt went in at 10:45.  Napped on the couch and set an alarm for every hour to feed it until 3am. That means it had consistent smoke until at...

First time smoking Boston Butt, Timing for Kickoff (West Coast)

Just got an MES30 for my birthday (which is actually tomorrow).  Have an 8lb butt ready to go (seasoned the smoker today, so it's ready as well).  I'd like to be able to serve at about 3pm so that people can have their food for the start of the game.  I think the 8lb butt should take about 12...
