I just got done reading through Rytek Kutas book, and in there he said that poultry should always be cured before smoking. Is that true? Or is he talking about cold-smoking rather than hot-smoking/fully cooking?

Do you remove the skin and trim the fat prior to curing/smoking? I've heard it both ways, but I just can't imagine leaving the skin/fat on will yield good absorption of the cure and smoke. Am I correct?

Whoops, I totally screwed that first post up. I thought it was the ET-73 on sale, its actually the ET-7. The one you linked to is the ET-73. But doesn't the ET-73 normally sell for around $45? The ET-73 is even lower than the ET-7 I linked. Am I missing something or is this a really good deal?
