I have problems with the patience part sometimes too..... I have tried to rush a few things... they always turn south.... kinda learned my lesson i guess - the hard way.....
Have have a few things - (a few butts) go down 14 - 18 degrees....
Fired up the char griller today... BAR-B-CHEF is still up at Gramason's place...
but threw on some ribs witha little magic dust doin a 321 deal and some sweet italian sausages for something to munch on....
QVIEW to follow sometime today.....
Thawing a butt for tomarrow....

Like stated earlier.... to produce consistant results... different peices of meat definately have different times and reaction during the process....

Back when i worked with plastics we had a barrel that had different sections that required diff. temps.... a thermocouple went out...
we didnt have one for that section... so i added about two feet from the thermo - cable that i had previously removed... It made it about 200 degrees...

Like Rich said there are some simple mods like the coal basket that will help!
Check through the sticky for char griller mods....
the gap thing can be fixed easy with some wood stove rope gasket or high temp stove caulk/RTV....
the heat shrink thing isnt for a home repair or slice i hope.... usually thermocouples or probes are calibrated to the resistance of the probe and wire... splices or changes in length affect the temp reading!
And Geek... i thought i remembered that from somewhere too....the hot oil thing....
DABOYS gave good advice.... my char griller came with one of those shelves and it didnt go in when i assembled it.... be sure to spray her down good with some cooking spray or wipe down with oil or EVOO....
He is also right on about the thermo... stock ones are usually pretty far off and not...
