Vermont Castings Propane Gas Smoker VC3624GS

The Great Outdoors smokey mountain is made by the same manufacturer (CFM) and is quite abit cheaper at 189.00. Only differences are thinner steel, not double walled 304 stainless and it's black. Almost every thing else is the same including the burner.

    Need a little help

Yeah, that's kinda what I was thinking. Once I pull it, I'll have a better idea. I might just be real light with the bark I include in the mix.

    Need a little help

I'm doing a brisket today, and I think I used a tad too much black pepper in the rub. I'm about 164* into the process, and I'm spritzing with apple juice/bourbon mixture. The bark looks good and the whole cook is going well, but I'm concerned about the pepper. I'm planning on pulling/chopping...

    No Smoking!

Sisco, looks great. But I want to comment on your Patriot Guard Riders patch. You do an awesome service to the fallen. From a veteran who can't stand the scum of the earth protesters, I want to personally thank you and your crew. I won't go into details here, but some like minded folks were...

    Burning Charcoal in GOSM widebody

It's very possible, however, they make a charcoal version of the GOSM. It might be a better idea to just buy it.

    New in Texas

Harrigans :) I've certainly been there. Ransom Canyon too. Used to hang out at the lake during the off hours from school to decompress a little. As for the pawn shop, I stopped in there a while back to see the guys and they had closed up. Their mother pretty much owned the place and I guess...

    New in Texas

Welcome Lawdog. Just curious if your moniker means you're with the PD there in Lubbock? I worked at a pawn shop out on Ave A back in the late 80's when I was going to TTU. Had quite a few of the local PD stop in for coffee on a regular basis. BTW, what is this restraunt of which you speak...

    Natural gas verses electric indoors

One thing I've seen is a double walled 304 stainless GOSM (under the Vermont Castings tag). The door is sealed (some sort of plastic/rubber gasket. Putting a sealed smoke stack on it shouldn't be too hard. Price last time I looked was around 500.00 US. Still not sure this would do for you...

    Add chips throughout process?

Scott, First, welcome to the site. Now to the question at hand. I have a GOSM that is very similar to your smoker. I use large chunks (2" cubed to fist size) of whatever type of wood I'm smoking with. I usually put two chunks in for the first part of the smoke and add the meat when the...
